Dumplings
The dumpling is part of the everyday life of South Tyroleans
We serve dumplings in all kinds of variations. We cook bacon dumplings, spinach dumplings, cheese dumplings or liver dumplings as a warm starter or as a side dish for main courses. For dessert we serve apricot, plum or curd cheese dumplings. We simply love them in all variations! Which dumplings do you like best?
Here is our recipe for traditional bacon dumplings
Ingredients for approx. 8 dumplings
90g bacon in small cubes
40g onion
150g dumpling bread (white bread cubes)
20g butter
40g flour
100ml milk
2 eggs
1 tbsp parsley/chives
Salt
Preparation
Sauté onion in butter and mix with bread cubes. Mix in flour and bacon and then add eggs, milk, parsley and salt and mix well. Leave the dumpling mixture to rest for about 20 minutes. Shape the dumplings and simmer in salted water, half covered, for about 20 minutes.
